Sometimes when you work hard and keep at it, your dreams can come true. Back in 1986 my husband Mike was 30 and I was 26 years old, pregnant with my third child. Gil’s was on the market at the time so with my Dad’s encouragement, off we went, with very little money and a lot of determination.
So here I am 30 years later and I look back thinking “ how did we do it?” We were so young , we went from having one employee (we had a food truck before that), to having 30 or so. We now have 45. And there were a lot of trials and tribulations along the way. There were times when you just wanted to run and hide. But we learned from our mistakes and went on. Even when we felt like we couldn’t.
Two of my sons now work with me, Matt helps me run Gil’s and Mike runs The Warehouse. I have a third son Daniel who is a union HVAC journeyman. I have countless wonderful employees that are the backbone of this place. Craig, my kitchen manager, has been with me for 24 years. Jaimi, my other front of the house manager, has been with me for 12. There are several servers and bartenders that have been with me just as long. I am truly blessed.
